Orange Bourbon is a genetic mutation of Red Bourbon where the cherries ripen to a distinct bright orange colour, giving it its name. \u003c\/p\u003e\n\u003cp\u003eProcessing begins by floating harvested cherries to remove any that are green, overripe, or dry. The cherries then undergo a 24-hour oxidation process in plastic drums before being dry-pulped. After pulping, a 36-hour fermentation removes mucilage, and the coffee is washed at 45°C to induce thermal shock. A second fermentation takes place over 72 hours at temperatures below 25°C using specific yeast, finishing with a cold wash at 5°C to seal the process. The province boasts the largest diversity of plant life in China, benefiting from a tropical but temperate climate, mountainous terrain, as well as distinct wet and dry seasons. Therefore, Yunnan provides the ideal conditions for growing high-quality coffee and is responsible for 95 percent of China’s coffee production. However, despite being grown here for over 150 years, it is only recently that the international boom in specialty coffee has driven a new generation of producers to seek high-quality production. Traditionally, most coffee grown is either washed or naturally processed, but thanks to initiatives such as Project One Light, farmers are being given a platform for experimentation and innovation.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003e\u003cspan\u003eGrown in the highlands of Mangshi, 1300 to 1500 meters above sea level, cherries are carefully handpicked at peak ripeness during the harvest season. After harvesting, the cherries are sent to Olina and her processing team at their washing station in Dehong. Here, the cherries are placed into anaerobic fermentation tanks, where a patented yeast strain is introduced to guide flavor development. The cherries ferment for 30 days at a controlled temperature of 12°C, allowing the yeast to interact gently with the natural sugars and enhance the coffee’s complexity. Once fermentation is complete, the beans are thoroughly washed in fresh mountain water to remove any remaining mucilage. Among them are Amal and Ishraq Al-Ofairi, who manage roughly 300 SL28 trees across 25 matrah of land. Amal learned to farm alongside her father and grandfather, while Ishraq now shares the daily labour of pruning, harvesting, and drying. Their work continues a lineage of cultivation that has endured through drought, conflict, and isolation. Amal and Ishraq serve as a living record of Yemen’s coffee heritage.\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003eThis lot, an SL28 naturally processed coffee, captures the elegance and vibrancy for which Bani Ofair is celebrated. The variety, renowned for its drought resistance and high-altitude performance, thrives here, producing a cup defined by notes of vibrant fruit, floral aromatics, and deep, structured sweetness. After selective picking, Qima’s team transports the cherries directly from the farm to their central drying facilities. There, the cherries are laid on raised parabolic drying beds for 15-25 days, turned regularly to avoid over-fermentation. Thus, the Honeymoon Washed project was born to give new life to Washed Ethiopian coffees. Inspired by Kenya’s 72-hour washed protocol and elements of honey processing, a new process combining dry fermentation with washed processing was created. This process, known as Dry Fermented Washed, is now one of Ethiopia's most talked about processing methods and results in a cup that retains the tea-like structure and bright acidity of a traditional washed Yirgacheffe, while introducing increased sweetness and a fruity body. \u003c\/span\u003e\u003cspan\u003e\u003cbr\u003e\u003c\/span\u003e\u003cspan\u003e\u003cbr\u003e\u003c\/span\u003e\u003cspan\u003eTwo years of experimentation have gone into this process, where cherries are harvested at 21° Brix, floated, pulped, and placed into dry fermentation tanks for a controlled 72-hour fermentation. A gentle mid-fermentation rinse ensures clarity and avoids unwanted ferment notes, before slow, even drying on raised African beds.
